Deconstructed Tzatziki (inspired) Dip

The inspiration for this recipe came to me a few days ago while I was enjoying a delicious lunch from my favorite Greek restaurant. I love tzatziki so much I could eat it all on its own and be happy, I thought to myself as I was shoveling said tzatziki into my mouth. Then I realized, I could! This deconstructed tzatziki dip combines all of the flavors of tzatziki, with a twist on one crucial ingredient.

Recipe

Makes 3-4 servings (great for prepping ahead for the week!)

Ingredients

  • 2 cups greek yogurt

  • Juice of 1/2 a lemon, plus more if you like it nice and lemon-y

  • 3 tbsp fresh herbs (optional, but so good - dill and mint are my favorites for this)

  • 1 clove of garlic, grated

  • Salt and pepper, to taste

Instructions

Mix all ingredients together and adjust lemon, salt, and pepper to taste. Serve with cucumbers (it’s only right). Also great with whole wheat crackers, pita, or seeded crackers!

Store leftovers in the fridge for up to a week.
